Rhythmed by the seasons, Mauritian terroir shines here: patole, mouroum, sweet potato chutney, combava, and arouille artfully enhance the exceptional meats and lagoon fish, sourced directly from the village fishermen. Seafood, in fact, takes center stage on the menu of this lover of the sea. His signature dish: pan-seared scallops, glazed with a creamy kaffir lime sauce.
