Created by Chef Yovan Bhantooa, whose experience has been shaped by numerous stints at haute cuisine establishments, the menu\u2014with its refined simplicity\u2014pays homage to the island\u2019s teeming lagoon. Passionate about the sea and its bounty, the chef works tirelessly to showcase the island\u2019s local terroir and \u201cmerroir.\u201d \u201cMy philosophy is simple: respect the ingredients, highlight their natural flavors, and offer cuisine that is authentic, generous, and accessible,\u201d he says. Drawing inspiration from classic recipes, this master of flavors enjoys reimagining traditional dishes by adding a touch of fine dining and a generous dose of creativity. <\/p>\n

During the day, the dishes combine freshness and creativity: seafood gratin, beef sirloin with gratin dauphinois, grilled lobster with parsley rice\u2014not to mention the restaurant\u2019s famous fish and chips! In the evening, Chef Bhantooa takes it up a notch: fish ceviche, bouillabaisse, a trio of tuna dishes, Black Angus ribeye with truffle-infused mashed potatoes\u2026 The chef\u2019s signature dish?
