For Chef Darel Bazerque, Mauritian cuisine is a living heritage that must be preserved, developed, and passed on. For more than 15 years, this Mauritian chef has been working in the luxury hospitality industry, driven by a constant ambition: to showcase his island’s ingredients, culinary expertise, and flavors. His connection to cooking began at a very young age. As a child, he would accompany his grandfather and his uncle—a butcher in his village—and discover the techniques of an artisanal craft that has since become rare. Making sausages, preparing smoked meats, and learning about local products fueled a passion that would stay with him for life. His professional career then led him to work at several prestigious establishments in Mauritius, Dubai, and Oman, notably with the One&Only, Jumeirah, W Hotels, and LUX* groups.
Currently Executive Chef at the Veranda Grand Baie Hotel & Spa, he oversees all of the property’s culinary operations, ensuring a balance of creativity, quality, and operational excellence. Throughout his career, he has been involved in several hotel openings and has worked alongside leading figures in the culinary world, including Yannick Alléno and the teams of Alain Ducasse. These experiences have not only strengthened his expertise but also his desire to share his knowledge.
For him, the future of Mauritian cuisine lies with the next generation. He therefore mentors young chefs so they can learn about their roots and, in turn, build on this legacy. “Cooking is a universal language that brings people together through emotions and unforgettable memories,” the chef notes. Through his work, he champions a Mauritian cuisine that is proud of its identity, open to the world, and capable of expressing itself at the highest level. His commitment thus extends beyond the plate: he helps make gastronomy a true ambassador for Mauritian heritage.
