From dream to reality

Trained as a teacher, Marie Letandrine has always dreamed of opening her own café. A pastry aficionado, she has been delighting friends and family with her delicious cakes and sorbets for years. In 2025, she decided to bring her aspiration to life by opening Lady Mary, a charming little meeting place in St François. Eugénie Sauzier-de Rosnay

Since she was very young, Marie has loved to get her hands dirty – a passion she inherited from her grandmother… who, by the way, was called Mary! Fascinated by her creations, her friends and family soon encouraged her to set up her own business. She began this adventure in June 2025. “It’s not easy to start from scratch. But I’m a positive person, and challenges don’t scare me,” she confides.

Assisted by her daughter, she gives free rein to her imagination… When she’s not revisiting the classics – like her Paris Brest gourmand or her tasty lemon tart – she’s creating exquisite pairings, according to her whims. Lily Rose tart with lettuce and rose, mango-passion-pineapple charlotte, piña colada tart, sweet potato and salted butter caramel sorbet, coconut-combava or pineapple-chili-coriander… “I like to juggle with different ingredients. I love juggling flavors and aromas,” she says.

In addition to these gourmet works, Marie also offers ready-made dishes, such as her sunny chicken salad, groovy quinoa or “garden smile”. Other dishes are added to her menu, depending on the day of the week: pasta on Tuesdays and Fridays, a good manzer lakaz on Wednesdays, salted fish brandade on Thursdays and her unmissable boiled mines and crab broth on weekends!

Four months on, this new venture is proving a great success. For Marie, it’s not just the passion with which she infuses her creations that keeps her customers coming back week after week. “In my opinion, our sense of welcome and cordiality make all the difference,” she reveals. And the decor and the beautiful glassed-in ” open kitchen ” definitely weigh in the balance!
