Jean-Michel Lacour prides himself on precision in the kitchen. His respect for recipes, flavors, and his customers has allowed this thirty-something chef to stand out. Specializing in Asian, American, Japanese, and French cuisines, the chef behind Wazaabi draws on the culinary diversity he has discovered through his experiences across several continents. ZAK

In the United States, he was confronted with the rigors of the trade and its diversity. Working alongside a Michelin-starred chef, he honed his skills and took on a part-time position at a restaurant specializing in sushi, where he completed his apprenticeship. The art of cutting, the pairing of ingredients and textures, and the attention to presentation: these are all facets of a culinary art that demands creativity, precision, and originality.

He brought all of that expertise with him when he embarked on the Wazaabi adventure in Beau-Bassin. The restaurant quickly became a must-visit destination, allowing him to establish his signature culinary style. In the United States, it was also his Mexican friends who introduced him to their traditional cuisine. The sauces and dishes he serves are prepared without cutting corners, with a commitment to authenticity.

Yet nothing seemed to predestine him for this culinary adventure. While studying engineering in Budapest, he decided to change paths. “I was very interested in cooking, culture, and languages. I had to convince my parents that I needed to change paths, he says. He then returned to Mauritius to study the various aspects of the hospitality industry at Vatel. After completing his training, he gained experience at several prestigious hotels before setting off to travel again to broaden his horizons.

Very soon, Wazaabi will be moving to a new location with the goal of getting even closer to its customers. The restaurant will also be launching an innovative catering service and a new concept designed to introduce diners to original and authentic flavors.
