Created by Chef Yovan Bhantooa, whose experience has been shaped by numerous stints at haute cuisine establishments, the menu—with its refined simplicity—pays homage to the island’s teeming lagoon. Passionate about the sea and its bounty, the chef works tirelessly to showcase the island’s local terroir and “merroir.” “My philosophy is simple: respect the ingredients, highlight their natural flavors, and offer cuisine that is authentic, generous, and accessible,” he says. Drawing inspiration from classic recipes, this master of flavors enjoys reimagining traditional dishes by adding a touch of fine dining and a generous dose of creativity.
During the day, the dishes combine freshness and creativity: seafood gratin, beef sirloin with gratin dauphinois, grilled lobster with parsley rice—not to mention the restaurant’s famous fish and chips! In the evening, Chef Bhantooa takes it up a notch: fish ceviche, bouillabaisse, a trio of tuna dishes, Black Angus ribeye with truffle-infused mashed potatoes… The chef’s signature dish?
